I am newbie to Lenovo (switched from years using macs).

What are all the things you can use the ultrabay for? I know about SSD and HDD? Are there other things?

You can use the slot to fit an Ultrabay battery on certain models for ridiculously long time computing without charge (assuming you got a nice 9 cell battery to go with it).

You can also use it for an optical drive, DVD, DVD-RAM, CD, etc.

If you're really nit picky you can also get an Ultrabay Travel Bezel which does... nothing really. It's primary function is just to save weight!
