After searching a LOT for a way to do this, I finally found a plug-in that works with the latest version of Itunes. This plug-in allows me to use the media buttons on my T61 to control Itunes while it's minimized.

All you need to do is download this file & put it in your Itunes plug-ins directory: http://www.hostfile.org/mmKeys.dll

    In Vista, the directory is: C:\Users\USER NAME\appdata\Roaming\Apple Computer\iTunes\iTunes Plug-ins

It's confirmed to be working in Itunes 7.6 for me.
