I been contemplating about installing Vista on my Z61p for sometime now and I would like to get some advice from people who already have installed Vista on their laptop. First, to my understanding Vista has new file system, so it is better for me to format and reinstall altogether? Second, if I do choose to reformat and install, would I still be able to install the ThinkgVantage and related software utilities that comes with my ThinkPad? Lastly, what should I expect as to the driver availability for the various components on my ThinkPad?

I can answer at least one question for you. Vista does not have a new file system, it still uses NT. They were contemplating a new one called WinFS but scrapped it a while back. And IMO, you would probably be best off partitioning and running Vista and WinXP side by side as some apps do not yet work perfectly in Vista.
And as to drivers and utilities, this is from Lenovo's own web site on the subject:
"NOTE: Users who have installed or will install “Beta” versions of Windows Vista may find that some system functions are not fully supported. Lenovo is now developing Windows Vista device drivers for our ThinkPad® notebooks, ThinkCentre® desktops and Lenovo 3000 family of offerings. These drivers are expected to be available on our Support for Windows Vista Express Upgrade Web page in late November 2006."
So based on that it looks like you've got another month or so to wait for full compatibility.
