I love the new W701! SSD RAID 0 in a Laptop is just SOOOO dreamy!
My Question: If I choose NOT to purchase the SSD RAID 0 array from the factory, can I create my own SSD RAID 0 array in the future? With my own drives?
Sony Vaio Z has a quad channel SSD RADI 0 array from the factory, but the drives that Sony installs are PROPRIETARY!!!! That means you cannot replace the drives if they ever die. Sony will cover you for up to 4 years (if you've got the cash). After that, you're on your own.

welcome to the forum!
the W701 series uses an intel RAID controller so setup is exactly like a desktop with its own RAID BIOS and monitoring software in windows. there's nothing proprietary about it and you can supply your own drives.
one could reasonably argue the "dreaminess" of RAID 0 SSDs but if that's your thing then the W701 will deliver. -
Take note that with RAID there will be no TRIM support.
RAID controllers do not pass TRIM commands to SSD drives at this time.
