Because I read in some posts that people have to enable ACHI after installing Win 7 and if it is not done correctly one may lose all the data. So I am wondering why not enable it before the installation? Is it because the HD won't support it or the system?

Using AHCI mode with the T60p isn't difficult with Windows 7. It's Windows XP that is the pain in the rear because you have to load the controller drivers using a floppy disk of all things. That isn't terribly difficult if you have a 3.5" disk and USB floppy drive. Not many people keep those around now.
If you are installing Windows 7, set the T60p BIOS to AHCI and go do the install. No fuss at all. No need for external drivers.
