I am just which one should I pick?
I will be using mine mostly for office task and surfing the web, no gaming. Is there a significant difference in weight and thickness? I also noticed that the LV processor has 6MB of cache compared to the 3MB of cache on the x200 processor.
And I know Lenovo will be releasing the new x201/x201s series once the Capella platform rolls out. Will Lenovo have a big old inventory clearance sale by then?

The price seems a bit high (although maybe not with 3 year onsite and Ultrabase). You should try and apply the appropriate coupons (look in the sticky). Additionally, topseller models tend to be a cheaper option if you want the Ultrabase/DVD burner.
Back to the original question. I would definitely say the x200s is worth a $200 premium over the x200. It is about 0.5lbs lighter, a shade thinner, and gets about 20% better battery life. The display is also a high resolution LED display of slightly higher quality.
Both models support 8GB of RAM (this is currently impractical due to the high price of 4GB DIMMs). Additionally, you will need a 64-bit OS to properly address that much RAM. -
Processor power should be of no concern for your tasks except for potentially less power consumption on the x200s. Resolution and some weight difference are going to be your main factors. Also there would be some missing options on the x200s such as the webcam and some connectivity options.
