I want to upgrade to the fastest SSD possible. Does it support the SATA 3.0GB/s or even 6.0GB/s interface because the official spec doesn't say what speed it runs at? Thanks!

It's a SATA I machine like the T60, R60 or X60. It does 1.5GB/s. The quickness of the drive is more so than the throughput is more important unless you copy/paste files all day. The quickness of the drive won't be effected by the cap.

I'm currently using Kingston SSDNow 100V (spec: 250MB/s read, 145MB/s write). Do you think I'll see improved performance, such as even faster boot up, if I upgrade to the current top dog SSD Crucial C300 with SATA III 6.0GB/s interface?

You would only see a speed increase if the speed bottleneck is in hdd. However, currently you only have the Z61m, changing the hdd won't give you any difference in READ or WRITE speed.
A simple analogy is where you are driving at 60 km/h speed, whether you get a car with 180 km/h top speed or 300 km/h won't really cut down your driving time if you are only driving at that specific speed. You would only see an improvement if you can drive at top speed without a speed limit.
