My y510p came with 8gb of ram but I can upgrade to 16 gb total. What single 8gb stick is recommended to bump it up to 16gb RAM?

Any DDR3L-1600mhz from a reliable brand will do.

My Y410P uses two 4GB sticks, so I would need to buy two 8GB sticks to upgrade to 16GB. Did your Y510P ship from Lenovo with a single 8GB stick?

Mine has 2 x 4 GB stick so you have to pull both of them.

Newer models come with 1x8 GB instead of 2x4GB. I guess it's a bit slower since it's single channel, but it does leave room for upgrades.
