I'm trying to decide which screen to get on a t61. I would like the swxga + for photo work, but I'm going to need to do something about the fonts, since I have terrible eyes. What is the difference between changing the dpi and changing the font size?

Changing font size only works for certain applications. Thus, those pull-down menus on some websites will still have teeny text. Changing dpi is an all-around solution. Of course, it just so happens that changing dpi might mess with your computer. Certain applications and Windows don't like custom dpi settings. It sounds like you'll just have to live with limited font size changes.

My eyes are comfortable using 125%.

I have 20/20 vision. I prefer larger font. Especially since the display on the 15.4" T61p is set to 1680x1050.

I don't see how people could stand 1680x1050 on a 15.4" screen normally at 96dpi... The dot pitch is small enough as it is on a 20in monitor like my 205BW so I'd hate to imagine having to read anything for an extended period of time on a monitor like that.

There's not going to be a clearcut answer or everyone. best thing to do is go to a store and compare WXGA and WSXGA+ settings and pick what you think works best. I so wanted the WSXGA+ machine, but wasn't willing to risk the small font size on some of my otherapps I use so I went with the WXGA. The store I went to was OK with letting me play with fonts and DPI on their machine.

Quite simply. Text size is slightly larger than in most books. Screen is slightly further than when I read books. Though I can still easily read it from ~5 feet away.

It's all about taste. After using WSXGA+, I can't understand how people can stand WXGA when you can barely fit anything on your screen.
