How do I get rid of the "double tap" feature on the trackpad? I have a T61 and then thing is way to sensitive and clicks a lot of times that I dont want it to click.

You know there is something called "UltraNav Wizard" as a part of ThinkVantage software... so just go there and adjust/disable the settings that bug you.

Last tab in the Mouse settings in Control Panel. You can turn it off there.
