I have gotten used to haveing dual monitors at work. I have a t43 now and want to get a decked out t60. I like using a docking station. Is there any way to use a docking station and have 2 monitors? Can they be any kind of monitors. Any advice would be great. I see not having this ability as a drawback to using a laptop for everything.

If the dock has a DVI-out you should be able to use a DVI-to-2VGA or DVI-to-2DVI adapter. OR you could use the DVI & VGA ports at the same time.

If you only have a VGA port on the dock, you could probably use the dock's and the laptop's VGA to get two monitors without any trouble.
