My current configuration is with 4gb PC10600 1333. I plan to get a 8gb stick at first. If there is problems running 4+8, I'll just do the 8 by itself as I will be getting another 8gb in the near future.
Should I match PC10600 1333 or go PC10660, PC10666 or PC12800 1600? If match, can you recommend which one of these?

1600 might give you a better graphics score if you plan on slamming the integrated graphics, besides that it really won't make a huge difference. Of course you'd have to have two 1600 modules, since it will downclock to match the slowest module in the system.
The biggest overall gain will just be from having two modules so that it can run dual channel. -
Yeah, no point in doing 4+8. And if I do 8 by itself it will be more expensive to add later. I think I'll just do a 2x 8GB set. From what I see, 1600 it is.

So I can't find for sure... is 1866 supported on 2520M? or is 1600 max? If so, I still may have a chance to cancel my order and get 2620M, if that makes a difference.

See my table here for an evaluation of RAM speed and combination on performance (the tests were done on my T420s with i5 2520M + Intel graphics). Having any two modules gives most of the dual channel performance benefits.
Also be aware that, if you use hibernation, then the more RAM you have the longer it will take as windows progressive fills up any RAM not used by programs).
