Without opening up my machine, how do I find out what motherboard I have in my Thinkpad x61s?

I think that the reason no one has answered you is that you are not providing enough information. The only things that are important in terms of identifying MBs is the chipset and available expansion slots. Those things should be described in the documentation available in the hardware manual for your model of laptop on the Lenovo support site.
