I am assuming this also version also applies to Intel 64-bit CPUs, such as my i7-2720qm?

Yep, AMD64 is the generic name used for all x86-64bit processors.

Yes AMD first came up with the x86_64 architecture, then renamed it to AMD64 later... Linux has been using x86_64 for the arch name.
Intel came up with its 64-bit arch almost identical to x86_64 more or less, and called it IA-32e initially, and then EM64T and then finally now intel-64
Though Intel-64 and IA-64 are different - the latter is for Itanium...
