I have purchased a refurbished Dell Mini 1012 that should be here within the week, along with a 32GB Corsair Nova SSD.
I am strongly considering installing a Linux distro on this, although haven't used Linux much in the last five plus years. My plans are primarily for web surfing, youtube, hulu, office apps, skype, a few simple games, and some sort of PIM.
So which Linux distro would you suggest?
Additionally, any fun, simple games that play well with a trackpad? I like strategy, card games (euchre, hearts, Texas Holdem, etc), FPS if it plays ok with trackpad, golf or other simple sports.
I have no clue what Personal Information Manager (PIM) software is out there either. Hopefully there's some good free open source options?
Sorry for all the questions, but this is all new to me.

I'd throw Ubuntu 10.10 at it. Not so much because it's the best idea (it may or may not be), but because it seems like it'd do what you want it to.
However, it may or may not do so well with graphics support.
Then again, a lot of Linux distros give you the option to play around with a Live CD that'll give you a good feel for how a specific distro will work. -
Ubuntu would work... You could also try out Linux Mint, Fedora, puppy, slackware, crunchbang...with a lightweight desktop environment like lxde or xfce for example..

Ubuntu all the way. Im running it on all my linux boxes and even as a dual boot on the m11x. Works great and stable as can be.
