That has little to do with Chrome, actually.
Cromium has been available for some time.
But yeah, OS X and Linux versions should be out soon.
I believe they wrote some of Chrome in Assembly, and Linux Assembly is different from Windows Assembly. -

Actually you can use Chromium on Linux now (at least on Ubuntu) by installing from this PPA: https://launchpad.net/~chromium-daily/+archive/ppa
I tried it out, it doesn't work too well... yet. It loads web pages, but it may or may not crash afterwards. Also, there's no tab bar, so if you open a new tab, your current window either crashes or goes missing.
You can also use it through WINE or try out the port from CrossOver ( http://www.codeweavers.com/services/ports/chromium/)
