I am using outlook 2007 on Vista on my desktop to manage all my PIM; calendar, tasks, notes, contacts. I was planning on getting Palm TX to track these while away from my desk or traveling. Then I got to thinking that an EEE PC might be more useful. The question I have is what is the easiest way to sync with Outlook if at all its possible?

install windows xp (wouldnt recommend vista, hardware is insufficient) then install outlook

I suppose you'd need a client software for linux that is able to import the data from Outlook. I'll move this thread to the Linux forum, you're sure to get better answers there.

As far as I can tell, the Eee PC comes with Mozilla Thunderbird installed as an email client, (in addition to a webmail client). However if you want to try and sync completely with an Exchange mail server, you will likely need to look into installing Evolution on the Eee PC. BTW, that will typically take some work, as it's probably not something that can be done on the Eee PC, as easily as it can be done on a standard Linux install.
Evolution does support synchronization with Exchange mail environments, including syncing of calendar meetings, and address book. It requires an additional module, called the Evolution Exchange Connector, and your Exchange server needs to have Outlook Web Access enabled. Finally, it will support Exchange servers up to version 2003, but not the most recent version of 2007.
