How can I uninstall the linux partition, but have it so I can still boot into windows and eventually expand the windows partition?

You'd need to fix the master boot record (MBR) for windows. The process is slightly different for XP and Vista. You'll need an install cd/recovery cd. I think there are also programs out there that do this. Just google "fix master boot record" and your operating system. You could even use gparted to move the linux space into the windows space.
