2GB of ram is plenty. Yes, use the desktop version for a laptop.
There is a sticky at the top of the linux forum that is excellent. I would strongly recommend spending a few days reading the links that it points to before starting.
Plan on dual booting with another OS that you are comfortable with at first, so you have a working OS while you are learning Linux. There are links to guides on how to do that in the sticky. -

For example, i have hands-on install and use experience with 2 laptops with these specs:-
a. Fujitsu Lifebook C6530 with Pentium3 486mhz processor, 128mb ram, 10gb HDD, 14inch screen.
b. Compaq Presario C1200(or something like that) with AMD 233mhz processor, 64mb ram, 4GB HDD, 12inch screen.
Result:-
Fujitsu- works with various distros such as Ubuntu, Fedora, Mandriva, PCLinuxOS, Puppy. All with desktop environments of Gnome and below(XFCE, Fluxbox, OpenBox). FlashVids played choppy, due to limitation of processor and ATI Rage Legacy video card. Other applications fine.
Currently installed with Xubuntu.
Compaq- currently running with Puppy, all various versions tried, except those with E17 D.E. Fluxbuntu tried, failed. No other distros worked.
If you have an old laptop or computer lying around and you would like to try with Ubuntu, make sure that the cpu is rated 600mhz or higher, with sufficient ram- 128mb can be sufficient if not much application are running at the same time, the more bigger ram the better. -
2 g of ram is plenty for a full install of ubuntu. It should be pretty quick even with compiz enabled! Ubuntu has excellent hardware detection too.
You want the desktop edition for your laptop. Remember there is Kubuntu and Xubuntu too, along with a huge number of unofficial variants.
Here read through this:

2 GB is plenty for Ubuntu Jaunty. I haven't tried it yet, but I've heard if you want to run Vista in a virtual machine, you might want to add a GB so you can let windows pig out and not have to worry about RAM for your host system.
I've been on 9.04 for about a month and I haven't broken 1 GB yet. -
