I am running out of space on my MSI GS70 Stealth Pro. It has only 128GB SSD.
I still have a free slot for another disk, I am thinking of buying one more 128GB SSD and make a RAID0.

Don't use RAID-0 unless you have a strong backup plan in place because if one drive dies, you lose everything. Your second option of getting a second 256 GB drive to use separately is the better one.

raid zero is a terrible idea, you gain very little in performance and just added risk of losing the entire raid.
These days 512GB cost nothing, I would go for that.

I have always had a separate drive for my OS. It fragments less (Or TRIM), has less I/O's so it lasts longer and malicious downloads don't get access to the OS, the DL's are on a separate storage drive.
I go back to the days when I would buy a 500GB 10,000RPM HDD and short stroke the drive, partition 150 GB and only use that for the OS.....
SSD's have eliminated a skill .... I'm getting to be an antique now.
