So I was just testing the new CPU-Z program (new to me anyways...been using one of the first releases that supported C2D so far...)...and I cam across this and it was slightly puzzling/boggling....

This may be wrong, but if it isnt, does this mean that I can just take the CPU from my GX640 and toss it into say an MSI P55 GD80 and have a "borrowed" core i5 for testing?

No, it's a glitch in CPU-Z
Look at this list, the mobile Core i5 uses a different socket:
