First of all, this is my system.
It has the default config listed on this website, with 8gb more ram and better thermal paste on the cpu/gpu

I have my laptop hooked up to a gigabit ethernet connection, but I can't seem to enable gigabit lan. I went into the card's settings and then the speed settings and i was only offered the option to use 10 or 100mbps mode. Any ideas? Any help would be appreciated, even if it doesn't fully solve my problem.

It's gigabit by default and two slower speeds can be forced if needed- that's why there's no 1Gb/s speed.
Amusing you've checked that your connection speed as reported by Windows is not actually a gigabit and the port on the router is also 1Gb/s- make sure that you're using a proper cable- at least Cat 5e. -
I'm using a cat5e cable. Are you saying that i can't force gigabit Ethernet like I can force 100mbit Ethernet?

Yes- Gigabit is the default but can't be forced. Are you sure that the device on the other end- router or switch - has Gigabit ports too?

I probably don't have a gigabit connection then, but I'd like to see someone else confirm or dispute the part about not being able to force gigabit LAN . Even if it makes no difference to do so, it doesn't completely make sense that I can't force gigabit LAN when I can force 10 and 100 Mbit LAN.
