    I really want to build a server but I would probably need around 8Tb to do what I want.

    I only have 8TB. Sad face. I've been using spare copies of Win7 HP, though.

    Something I've always wondered about Windows Server: does it do more than, uh, serve? for example, on my pseudo-server, I run several programs out of it, including a Mumble server, like four Killing Floor servers, some P2P/Direct Downloader clients, an FTP server, TightVNC, and so on. Would they be compatible with Windows Server?

    You can run anything on it that you can run on Windows. I ran quite a few things when I ran my last WHS.
