Even looking at the currently available options, theres 3 of them...... what are the benefits of any of them over the others?

I mean, the CF30 only had 1 option available at any given time, surely it would make more sense to do the same with the CF31's

Yes but back then there was not a lot of choices in cpu's and the 30 has no fan but the 31 does

According to the configurator on the panasonic site, the current options are:
    i5-3340M @ 2.7ghz
    i5-5300U @ 2.3ghz
    i7-5600U @ 2.6ghz

also, integrated graphics is the only option

I assure you that ATI graphics are on the performance models.

The mk 5's still have the dedicated graphics.

    a little clarification ...
the "desktop" versions of cpus did have several permutations available .
the "mobile" versions of cpus was more limited .
a big difference between the two lines was in the "power management" ...
simply put , a "mobile" cpu would "fold back" every chance it got , while the desktop stuff was not so stringent .
also , with the ever-shrinking "size technology" (think transistor size in nM) what was the "latest" was offered up as mobile fare first and was soon incorporated in the desktop cpu scene .
mobile cpus often have a different architecture from their more common brethren ... besides power management schemes and package footprints there are/were differences that by virtue of not having as many "on chip" options available (as they were not needed and more expensive to incorporate) lent themselves to the mobile computing market .

today , the situation is much different ... (increased) mass production and much lower power requirements have made things available in the desktop market for cpus that at one time could only be found in the mobile flavors .
sure , you can always design a mobile application around a desktop cpu (this was common with laptops of 10-15+ years ago) and throttle back the cpu in some hopes of extending battery life ... or include a battery big enough to jump start your car .
one of the earliest "strictly mobile" cpu lines the "M" series from intel
