Last night I had my 2090 running on battery with the screen brightness turned all the way down (Fn+F4 - I believe). I had the battery settings on power saver. Randomly the screen would go back to full brightness and I would have to turn it back down. It happened about 3 times over the course of ~3 hours id say. All I was doing was wasting time browsing these forums :) So it wasn't a intensive task or anything. Didn't know if anyone else has experienced this.

Try watching the processor maybe it spiked to 100% randomly and caused it? I know CPU usage will jump sometimes when opening a page. Maybe that could trigger it.

I've had this happen to me. For whatever reason, it seems if you're on battery power, and you change the brightness with the F# buttons, it will revert to whatever brightness you have set for that power profile. If you just go into your power options and set the brightness all the way down, then it should stay that way.

That's correct, use power options brightness. Fn does not work as expected on 2090.
