Will 4 let me edit music and movies, game, do homework just fine? Or can I notice the speed increase with 8 gigs?

For what you listed, 4GB should be enough, but it depends on the games. Some games you would see a performance bump going up to 8GB as say, Windows 7, uses ~2GB on its own.

And I'll buy an NP8150 with a 6990M right now if you guys upgrade the screen to the 95% Gamut Glossy for free. -

You're better of with 8gb, which seems to be the standard now a days for newly build machines. Especially as said earlier, if you're gaming, you'll want more memory to make sure you're running smoothly since Windows likes to use mroe memory.

I ordered the 4x2gb instead of the 2x4gb sticks. This shouldn't have any effect on performance, right?
Can there be issues when upgrading RAM that doesn't match the other two sticks? (Say, having 2x4gb in tandem with 2x2gb) -
I went with 16GB.
I originally ordered 2x4GB RAM and added another 2x4GB kit I picked up for $40 on newegg.
If you go 4x2GB, you'll have to trash out two sticks to upgrade. -
But there aren't any issue so long as you swap them out in pairs?
e.g. 2x2GB + 4x4GB is good, but 1x2GB + 3x4GB is bad?
Just out of curiosity, what kinds of problems arise from replacing RAM the bad way? -
You'll never notice a difference, regardless of how you mix and match.

For a Digital Audio Workstation? It depends what you're doing with it, but most likely not. 8GB is the recommended minimum for pretty much anything over basic productivity anymore. If you're mixing audio or anything like that, you'll probably appreciate the extra RAM.
