    So,

I like the backlit keys on the 8180, also including the option for 3 hard drives + optical drive

What i am not sure of is the Dual 560m graphics vs a single 6990m or 485m in the 8170

Other options will be the same, i7-2860QM, 12GB 1600

Main use would be Starcraft 2 in 4v4 multiplayer (where FPS matters most) and video encoding

I think GTX 560m in SLI roughly equals to a GTX 580m.
And the card similar to a GTX 580m is ofc the HD 6990m.

Please note that the Sager NP8180 does not have a backlit keyboard.

The NP8180 actually doesn't have a backlit keyboard. Currently there are no Sager machines that do.
As for performance DEagleson is right, 2x GTX 560M in SLI will out performance all current single cards including the 6990M, 485M, and 580M
Either of those models are good choices, the biggest difference you'll actually see is the screen size. While gaming and all the specs the same you'd never see a performance difference. Since the SLI 560M are beating out the other cards that configuration would be best for SC2 or any other games.
