Which panel is the best one for the P157sm?

That depends on which panel you have now (an eDP or LVDS type) and what you'd prefer; high refresh rate, high gamut and matter or glossy.
My preference would be the AUO B156HW01 V4; 95% NTSC and 95% Adobe RGB (movies and games will benefit) and it can be overclocked, being a TN, rather than IPS. This, coincidentally, was also one of the drop-in options for this system. It is an LVDS, so if you've got an eDP now and not a dual-socket motherboard (eDP+LVDS) then it isn't an option. If you do have the dual-socket board then it'd need the LVDS cable as well as the panel.
Sourcing a genuine panel is difficult since most 'new' options are for a 'compatible' lcd, which is exactly what you don't want. Only way to be sure is to buy used. There's a (very cheap) offer on ebay atm, but it looks like it's been white-washed ... perhaps it is simply a matter of cleaning, rather than permanent damage to the protective matte/glossy sheet. If it is the latter; this too can be replaced, but it is a job for a clean room or something that needs a lot of patience to do right, considering dust and such are easily trapped between the layers. -

Yeah looks like someone tried to clean it with the wrong chemical there.

Killing the panel. It is rare, but it can happen. Best is to find the maximum stable Hz and then stay safely below that value.
My record is 185Hz on a 1920x1200 ccfl+tn:
It doesn't help smooth moving images though, since the Quadro FX Go700 has a bit of trouble generating the extra frames. It does look like a million bucks, especially if you'd be sensitive to eye strain, but that has more to do with it being tube-backlighted rather than using leds.

Yes, see this thread:
After years of denial, Intel finally acknowledges Custom Resolution is broken and fix is on its way!
If your cpu is still unsupported by Intel's new drivers then try this workaround. Last resort is flashing a custom edid that has additional, overclocked refresh rates since these will always be accepted by the Intel HD driver, no matter the version. -
