I'm curious as to what others use for a backpack or case with regards to this particular model. I'm trying to find one with solid protection that is also not too bulky. I just want to fit the laptop and perhaps a few accessories. Most of the ones I've seen online are way too big for my needs.

Anything that fits the m17x will most likely fit your p370em, so I'd see if there's any confirmed fits for that. I think Alienware even makes one specifically for the m17x that's about $65 if you don't mind the contrasting branding.

I have an older Dell XPS 1730 backpack that the 370EM fits nicely in.
