Is there a way to set a temperature limit on a Clevo P870TM1-G (GTX 1080 x 2)?, MSI Afterburner doesn't show the option and RLECViewer doesn't work on every game for some reason.

You need to do some undervolting to the CPU and GPU's, make sure you have a good thermal Past/Pads applied for both. And the Fan's curves should be aggressive using Overclocking option in the command center application. Using cooling pad is highly recommended.

I actually have done all of that but summer here has been very hot lately (115 F almost every day) and playing on 1440p in my new monitor is almost impossible due to temperatures, I reach 80C almost instantly in any game and it goes up to 88C in some of them (I have close it wen it gets this hot). I can't control anymore how the temperatures behave so I'd like to just put a limit on them, I don't care about FPS at this point lol.

Check your vBios version, mine maximum temps are 80~82c in the full load. and make sure that the GPU's heatsink making a good contact,

Hi. Asus GPU Tweak II can change temp limit. https://www.asus.com/us/site/graphics-cards/gpu-tweak-ii/. You can also undervolt your gpu. For example I'm running 1911 MHz at 0.9V for single gpu use and 1695 MHz at 0.8V for sli usage.

If you want to control your gpu by temperature limit don't undervolt. Just set specific throotling temperature for gpu for instance 78 degrees and set gpu overclock to around +100. When gpu will increase temperature it will throotle. Original nvidia voltage curve have small steps wich are helpful to maintain suitable clocks.
