I OC'd my vc to 845 1690 1345 stable, I mostly play Dota 2, on avg i get temps of 75 degrees Celsius when playing. Is it safe to stay at these clocks for long?

It's probably fine if you aren't seeing any graphic artifacts. That's definitely a good temp.

840 core and 1500 memory seemed to be my upper limit for my old 460m which is very similar to the 560m.

As i seem to remember the 560m gtx was a very OCable card. I have that card in my older toshiba qosmio x775. As long as you can adequate cooling, OCing should not be a problem. You could probably push it to 900/1800 1500mem and you wouldnt have a problem.

Agreed that if you have no issues with your current values, you're okay; as long as your temps also fall in line with being stable.
