I'm not going to mention the company names, but let's say I'm requesting a price match, and Company A asks me for proof of the price Company B is offering. If Company B doesn't have an option on their site to automatically email someone a quote, how does one go about getting one, short of taking a screenshot of the checkout page? (which I don't think would hold up as proof)
Is this normally just done by emailing a sales rep?

Normally a checkout page that lists the complete specs and pricing or a link to show the pricing will provide the needed proof.
Emailing the sales rep wouldn't hurt.

the sales rep will configure it then by himselve and then can see if one thing is cheaper. so yeah, you should just give them the link
unless you buy from a company without a website XD -
what i did is sending the same email to 7 reseller asking them the best price... i did and i went with eurocom because they offer me a 10% student discount, cheaper shipping, and the fact that they are in the best country on this planet...
