Can you use both the HDMI and the DVI ports on the P170HM or P151HM at the same time?

Yes - you can either have two external monitors (DVI/HDMI) at one time - or one external and the internal laptop display.

Would this change with the ATI 6990 and the Eyefinity? Or does that require Display Port?

    THANKS!

I won't hold it against you if you tell me to go look it up, but is HDMI 1080p max res or can it go 2560 x 1600 ? Right now I run a pair of U2711's (2560 x 1440) from my m4500 in a docking station. I would like to continue.

That depends on the video card, and the monitors you use. I believe the 560 supports 2560x1600 as the max res on an external monitor.

The laptop screen will be limited to 1920x1080.

And if I were being cheeky, I'd send you here: http://.com/?q=http://www.geforce.com/Hardware/GPUs/geforce-gtx-560m
