Anyone off hand know exactly what sound chip comes integrated on the P180hm and how many sound channels it has/supports?

Check the drivers, they include the DAC model in their name. Then go to Realtek's site and search for the model. You will see what the DAC is capable of there.

I checked the driver details in the device manager, nothing could be found that states the chipset used.

Run this: "C:\Program Files\Realtek\Audio\HDA\RAVCpl64.exe"
And in the bottom right corner, there is an "i" icon, for information. There you can see the chip that is used.
I have the P150HM, my chip is ALC892
