What tool are you using for that? I tried msi afterburner but it doesn't show. GPU-z wont start. Screenshots showing how to use the tool is appreciated!

you have to start a program that engages the 7970 like MSI kombuster and then start the monitoring program. HWinfo is what i use

HWMonitor, similar to HWinfo fenryr423 mentioned but it just does temps.

HWMonitor doesn't detect the 7970M, even if I load the a High Performance-designated game before opening HWMonitor. MSI Afterburner does the trick, but you have to change the settings to display the temperatures.

How do you do that? Couldn't find anything in the settings.

In the [Monitoring] tab, you have to select the "GPU temperature" entry:

I haven't found a good program either. HWiNFO seems to detect my 7970m whenever it feels like it, and MSI Afterburner shows a max temp of 511 after playing Dead Island for 30 minutes. o.o

What you need to do is start up MSI Kombuster first.
Then from that open up GPU Shark. (It's the little "G" button on the lower left corner of your Kombuster screen)

You might need to restart GPU Shark after assigning it for "High Performance" if you've configured the switchabvle graphics to ask you for the setting everytime you start a new application.

Now that you have GPU Shark running, start up MSI Afterburner & you'll be able to see all the GPU Temperature monitoring tabs like the previous screenshot shows.

    Hope that helped.
