I saw there are different steppings for ES Intel CPUs on ebay.
I am not sure which one of them is better.
What is your suggestion ?

e0 is the same as the final retail / oem chips. c0 is fine also though.

Any QS Montevina chip will be E0/C0 stepping, which is all you should be looking for.
edit: late on the submit button again. Anyway avoid B1/B2 steppings. -
a1 is the worst. b steppings are fine imo but they do not show the actual name of the chip and will not show you the temps of the chip but all b steppings i have had all worked perfectly.
c0 will almost always show both but can sometimes say es after the name or ive seen some not show the name at times correctly but again they work flawless
e0 are always as good as retail chips imo. but c0 and e0 are both final steppings. a and b are pre release versions that as i said have some things missing but work fine -
