Would you go with the:
320GB 7200RPM (Serial-ATA II 300 - 16MB Cache) x 2
-- or --
320GB 5400RPM (Serial-ATA II 300 - 8MB Cache) x 2
Then RAID 0 or 1? I was leaning toward RAID 1.

if you want the fastest, than the 320GB 7200rpm is the way to go.
if you want best "bang for the buck" for both performance and price, the 320GB 5400rpm is great.
.... FYI, the 320GB 5400rpm drives perform as well as the previous generation 7200rpm drives since it has higher density.
As for RAID, if you want best load times, RAID-0 is the way to go... but if you lose one drive in the array, you lose all data.
If you want data redundancy for important files on your notebook, RAID-1 or RAID-5 would be a better choice.
I use RAID-1 since my notebook is for work and school, not just gaming.
I notice little to no performance loss (for the load times) by having RAID-1. -
