So, I created my UEFI USB Bootable with Windows 8 on it, but when I try to boot from it, my SSD kicks in and restarts windows 8 again. Any solution with this?

What is your boot order in Bios?

I try to make it go
    UEFI:Corsair
    Windows Boot Manager

But it just hits the loading screen for windows 8

Even when I try to go through boot manager and select uefi: corsair, it doesn't load up

    Disable Secure Boot.

If I disable secure boot, wouldn't that make my uefi enabled USB be pointless to reinstall, or will I still be able to turn windows 8 uefi enabled after the reinstall?

You don't need to disable UEFI to disable Secure Boot (if I understood your question correctly). Secure Boot helps to prevent malicious software applications and "unauthorized" operating systems from loading during the system start-up process. You can disable Secure Boot, boot from the Windows 8 USB stick, and install under UEFI, then go back and re-enable Secure Boot if you like.
