I installed a 2GB stick of DDR3 1066 Mhz RAM, although after opening up my sager NP 8662, I noticed that the 2GB RAM inside was labeled with 1333 Mhz.

Will this be problematic for me? Do I have significant need to go return this 1066 and buy a 1333?

This will not cause any problems. Your current Ram is likely downclocked to 1066MHz.

I notice a jump in RAM usage already:

when I had only 2GB of RAM, my task manager showed a usage of approximately 700 MB just after boot up.

Now when I have 4GB installed, usage has jumped up to 1.24GB
Is this related to the mismatch in speeds?

Windows 7 adapts with respect of how much ram you have. Because you have more ram it uses more ram for visual effects.

The mismatch in speed has nothing to do with it :) Like Justin said, the 1333mhz will downclock itself to 1066.
