When taking the computer apart to install a new hard drive, I don't know how to remove the speaker connectors from the sound card, which stops me from opening the machine up. I've seen some picture tutorials of lower model number S machines and the connectors are NOT the same. If I pluck them out, they won't work (it's been tried before).

I know there are some S380 and higher owners out there who've installed new hard drives so any help would be appreciated.

I don't know what they are off hand but there is at least one on this site. Just search for it. However, the model being shown is NOT an S380 or higher. It's one of the lower model numbers.

I recently upgraded my S580's harddrive to a Hitachi 7200RPM.
Its not like in those picture guides.

If your model has one of the RAM bays beneath the keyboard and if you had to pull out 2 white&green ribbon strips then you must be refering to the 2 black and red cables with a white plastic plug plugged right into the system board.

To be frank with you it didnt even cross my mind that they were the speaker plugs. Anyways, I didnt have to remove the top cover to replace the hard drive. I too was afraid of making any damages to the wires.
So I just maneouverd the top cover to unsrew the hard disk casing and install the new one, without breaking the cables.

Just tilt the top cover about 30 degrees clockwise. Be careful not to break the cables. This creates a hole to remove the HDD screw which you can now see beneath the cover. the other 2 screws are at the edge of the casing so they shud be easier to unscrew.

    Good luck
