Does the HDMI send both video and audio? or just video? (i dont care if its Dolby HD or not, PCM is fine).

Yes as many above me said, it outputs both.

As a side topic, do any of you use a 360 outputting on HDMI but can't use 1080P?

I have tried it on a variatey of TVs ranging from 32" to 62"

Nope, my 360 has been running 1080P from the beginning on my 52" Phillips HDTV. Though almost all games run at 720P anyways, so you wouldn't see a difference there.
