i have got a Sony Vaio VGN-Z11VN ...
i want to replace the stock 320Gb hard disk with a 1000gb disk - can anyone recommend which one will work??
i will be doing a clean install of Windows Server 2008 (so that i can run full hyper-v), as i do lots of database work on virtual servers for customers, and want to retain my existing hard disk should i sell i the future.

None. The bay takes a 9mm (standard height) 2.5" SATA drive, and the largest drives so far are 465 GB (500 thousand million bytes, sold as 500 GB to consumers).
The only 2.5" drives with higher capacity are server drives, which are thicker and won't fit in notebooks, nor will a notebook be able to cool them down properly. And half of them aren't SATA either, but SAS. -

its 9.5mm high ....
edit - i see the original drive in the machine (a Toshiba) is 9.5mm high- so if the interface works - then the drive should!

If you can live without a CD/DVD drive (use an external USB one when you have to) and somewhat lower battery life, I would rather recommend replacing the CD/DVD with a second 7200 RPM drive. -

hopefully shouldnt be an issue with regard to speed, as the stock drive in the machine is only a 5400 anyhow - and i'll be doubling my capacity as well
