I just bought a Vaio VGN-AR150G which apparently comes with a S/PDIF output on it, and I own a set of Logitech Z-5500 speakers, which have a digital & optical input built into the decoder thingy...

The laptop has yet to arrive, but when it does, how would I go about hooking it up to get 5.1 sound?

Should I be able to do it with just a simple S/PDIF cable, or is there something more complicated?

I have a AR250G and it has an optical out. Your AR150G should have one also. Look on the left side towards the back and there will be one for a head phone jack, a mic jack and the 3rd should be the optical out jack. You can use that to connect your speakers to.
