How much would the difference in the Display be if I choose:
i) 16.4" VAIO Display (1600x900) with NVIDIA® GeForce® 310M GPU (512MB VRAM)
While customizing the F instead of:
ii) 16.4" VAIO Premium Display (1920x1080) with NVIDIA® GeForce® GT 330M GPU (1GB VRAM)
The second option is Full HD and seems to have a more powerful graphics card but I heard with the first one I would have more battery life?
What are the positives and negatives of each?

GT330 is MUCH more powerful than the 310m and you can always use more resolution. As for battery, you'll probably get more with the 310m, but if you already have Intel HD graphics for power saving with the i5 or i7 I'd go with the higher resoultion and better graphics. It's always good to have a little more than you need.

And if the font or icons size were just too small then I can change their size through the settings

Yes, Windows 7 has a scalable DPi system where you can make text/icons larger if needed. -
So I guess the $150+ would be worth it?

Without even an iota of doubt ! Things like a high-definition screen etc are something that you cannot add on at a later date. I would go with the highest resolution screen and the best graphics card combo available and if you want less resolution, you can simply set it on your machine.

Does the new F model even have integrated graphics? They use the old i7 CPUs and there are no i5 models I've seen. I wish there were.

Which "old i7 CPUs" are you talking about ? These notebook specific Quad-core i7 chips with 8 threads, were introduced in 3rd quarter of 2009. When a company introduces a high tech component like a chip/CPU, it does not mean that it starts appearing in OEM laptops, a couple of weeks from introduction. The laptop manufacturers have to test the chips extensively and see how well they work with the rest of the components, how well/efficient are the built-in cooling systems and so on.
Bottomline, we are in Jan 2010 and these are the LATEST quad-core i7 chips from Intel. There are no other newer notebook specific Quad-core chips from Intel, than these chips that are on the F-series, unless you know something that none of us are aware of.
And yes, they do have integrated graphics.

The i7 doesn't have integrated graphics. The i5 does, which is available as an option on Sony Style Europe.

Yes, that is true. I did not realize that until you pointed it out. So with the i7 range, one will be running off the discrete graphics card than the on-board graphics, whether light application or not.
On the i7 based machines, one would be using the sledge-hammer, whether killing a fly or killing a huge boar, unlike say the ones with on-chip graphics where one can decide to use the fly-swatter for the fly and the sledge-hammer when the boar needs to be taken care of.
Either way, since I will be doing quite a bit of photo processing and video editing, I will be employing every single one of those quad cores and 8 threads that come with the i7 820 and middling dual cores won't cut it !

If I am not mistaken the i7 620 has integrated graphics.

Yes, the 620m has Intel HD graphics, and the 720qm doesn't. But if you know how to clock your 330m you can get pretty decent battery life, then when you want to play games.. ramp up your clock-speeds.
