So I really wanna try this out but never really replaced a screen any ideas on how to start? Cause all the s series is missing is just that, better battery life and an updated gpu then it'll be like an awesome machine even though it already is:0

Well anything is possible. I've never replaced the screen on a Vaio S, but I had replaced my Vaio Z screen - and so I would imagine the process would be similar. Replacement with OEM is not too difficult, however replacement with a touch screen might be difficult due to differences in thickness, connectors, etc. Unless you can make sure pre-emptively that these differences don't exist I would not bother, as correcting these problems would be really difficult.

Where would you buy a replacement screen for a Sony laptop?

...exact dimensions (length, width, thickness) mounting holes, which side the connector is situated, etc. will also need to be looked into. You might not be able to get all this information before you buy the screen. Be prepared (mentally) to have to dispose of the potential replacement screen in case it doesn't work out.
