I have a Windows 7 internal HDD with lots of files on it, from another laptop. If I put this in this SONY would it boot up alright?

Another thing I noticed was that it is only capable of 2GB maximum. If I try to play a Bluray movie on 1GB, would it play without buffering? What about on 2GB?
If I stick in a 1TB HDD would it work?

I doubt it runs. You may have to re-install windows because your current hard drive with Window 7 was running on a different machine which had different hardware than VAIO FE.

Does having different hardware change the HDD somewhat? Would it run if I plugged it into an ancient HP computer (from like the year 2000)?

It won't change the hdd, but drivers installed on the hdd will not match the new hardware thus a reinstall or repair would be needed
The same is true when plugging it to older hardware

So the only way I can get this HDD working is by either plugging into a Toshiba laptop or making a backup of the whole thing in an external HDD and then pouring it into a new internal HDD?

well plugging in it directly is fine, reinstalling windows as well.
it won't delete your files but you may need to reinstall programs.
a repair however will keep your apps, change the drivers and keep your files.
if it was me and that is the better hdd you have.
I'd do a repair first to be able to access my files, backup my files on an external drive then reformat the hdd and do a clean install of windows.
