I have been trying to figure out the difference between the Vaio TZ 1xx 2xx and 3xx series
There are some measly discounts available on the older series but I am trying to figure out if there is anything major I would lose out on by opting for the 1xx or 2xx

You are talking about the North American models correct?

No big difference between the series, except for slightly higher end features in the later ones like faster processor and more hard drive space. Just little upgrades, nothing big. You'd hardly lose anything.

The U7500 (1.06ghz) and U7600 (1.2ghz) were available in the 100 series and with the 200 and 300 series, the U7600 took the place of the U7500 and the U7700 (1.33ghz) took the place of the U7600.

The 100 series had the 32gb SSD option and then the 200 got the 48 and 64gb options, same for the 300 series.

There was a white model (TZ185N/WC) only in the 100 series, pretty rare though and way overpriced, so they discontinued it.
