For some reason, when I access the BIOS settings menu, most of the options are greyed out (e.g. I can't switch off the requirement for a password at boot).
Any idea how to re-enable the settings?
I just installed windows 7, but honestly I'm not sure when this change happened. Haven't enabled VT-X or anything like that.

You need to enter "machine" password while entering BIOS to have these items editable. You are probably entering "user" password.

Correct. If you have not harmed the restore partition, that is.
F8, but you have to hit it after the boot screen but before the boot begins.
Due to the small buffer of the keyboard, you can't just hammer F8 incessantly either -- hitting it a few times when the logo goes away usually does it.
(This is, by the way, Microsoft's fault, and not Windows' fault.) -
Press F1 at black screen before Insyde H2O BIOS screen or during that logo screen. It'll show selection of devices to boot from.
