I'm running a SA series laptop with 6630M AMD graphics and HDMI socket. I have connected a 1920x1200 monitor to it (no problem), but was reading in the user guide that this appears to be the maximum that can be connected.

I was thinking of 2560x1600 monitor a bit further down the line but I suspect it will not work. Has anyone had any luck connected monitors greater than 1920x1200 to the SA series via HDMI?

The maximum resolution possible with HDMI is what you are currently using, 1920x1200. The ONLY way to make this possible, is to use a 'hack' that another user in this forum discovered for the Z series. (Thanks Psych321 & ComputerCowboy)

I am unsure of how this procedure would transfer over to the ATI graphics that we have the in the SA models, however, it looks to be possible.
This workaround does lose a higher refresh rate, however, in most situations that is tolerable.
