I was wondering if anyone can help me out:

My Z used to turn the CD/DVD drive on/off to conserve energy/battery yesterday (while on battery or plugged in).

It doesn't seem to be doing so today. Any idea why?
I haven't uninstalled anything... The "Auto Off" on the drive is still set in the advanced power settings, so I'm not sure why it's not doing it.

No one has any idea? :(

Could any Z owner perhaps check which process controls this?

Make sure the profile in the Sony Control Panel is set to VAIO Optimized or Max Battery. You may have turned on high performance or could be using a Vista default power profile.

I made sure I'm on the correct power profile, and that the settings for it were right... Even on Silent mode, it still doesn't power the drive off.

Is there a service that I shouldn't have disabled perhaps? Something Sony's software may need?

    Woops...

I tried to uninstall and reinstall Vaio Power Management, and that made those advanced power options disappear :/
So I did a system restore, and they're still gone :(

Bloody Sony and their weird proprietary software...
    Any advice?

Try removing ALL Sony utilities and the Firmware devices. Then reinstall just in the proper order as if you were doing a clean install (another thread has these instructions).
